剛剛完成翻新工程的粉嶺華心商場1樓,經常傳來陣陣麵包香,原來是新落戶的Smile Bread 百份百‧烘培大師歐日式麵包店,請來麵包師傅每天即製新鮮的出爐麵包。難得的是,百份百‧烘培大師舖面設計亮麗,麵包賣相精美又好味,但價錢大眾化──一如店名「百份百‧烘培大師」裡頭加了「人」字部的「份」字,這間麵包店滿載著「以人為本」的社區情懷。

Smile Bread is a new bakery that just opened in Wah Sum Shopping Centre, Fanling. Every day, the baker of the shop makes fresh bread. The impressive thing is that even though the shop has an attractive design and exceptional bread quality, the prices of the bread are very affordable. As its name suggests, Smile Bread operates with a people-oriented mission to bring happiness to the community.



開業近一個月已擁有一班街坊熟客,這間開設在百份百餐廳旁的小小麵包店,其實是本地飲食品牌「亞洲國際餐飲集團」的嶄新嘗試。「我們有種強烈的使命感,希望為香港的麵包業帶來一點新意思,加點創意,用心把它做好。我們擁有專業的麵包師傅團隊,設立自家餅房,炮製自創的麵包款式,堅持出品即場製作的麵包,跟一些有製包工場的連鎖麵包店截然不同;同時可為行業訓練新血,讓我們年青的麵包師傅都有機會真正學懂做包。」集團創辦人柯鎮平微笑著說。

選料上乘 用心經營

為了讓客人享受到不一樣的品質,百份百‧烘培大師的主理麵包師傅繆鈞霖在開店前特意到日本考察,參考當地的產品風格。選材方面,百份百‧烘培大師指定採用最佳的用料,包括日本麵粉、瑞士Emmi牛奶、加拿大小麥及澳洲芝士等,確保客人吃得開心又放心。

此外,麵包店亦出盡法寶迎合顧客需要。麵包店每天從早上七時至晚上九時營業,期間不斷有新鮮麵包出爐,連晚上回家的上班一族也能照顧到。店內如辣牛肉鬆手袋包、香港情懷特長雞尾包和Smile吉士包等等趣緻款式,每款皆是用心之作,並非「行貨」。除了定期推出新產品外,團隊也會按季節巧製時令產品,例如聖誕新年天氣較乾燥,便會多做加添醬汁餡料,口感較為濕潤的麵包。

選址貼近社區 堅守營運理念

如此花心思製作的一流麵包,卻能維持以平民價售賣,柯鎮平坦言並不容易:「我們只能微中取利,但仍十分滿足,因為我們的信念是要把好東西帶給普羅大眾。看見他們吃得開心,就是我們最大的推動力。」「亞洲國際餐飲集團」還有好幾個品牌的餐廳開設於領匯的商場,柯鎮平說:「我們和領匯都有共同目標,就是努力為社區提供高質素的環境和服務。」

Despite opening only a month ago, the shop already has regular neighbourhood customers. It was launched as part of a new attempt by Taste of Asia Group, a local catering brand. “By making bread based on our own styles and by adding creativity to bread making, we hope to bring some new ideas to the local bread sector. We also have our own pastry room to produce freshly made bread and to train new bakers. Unlike other bakery chain stores, we give our young bakers a chance to learn how to make bread,” the group’s founder, Ping Orr, said.

Using the Best Quality Ingredients and Operating the Shop with Heart

To deliver exceptional quality to customers, K.L. Miu, Bakery Manager of Smile Bread, took a trip to Japan to learn more about the local products there. Smile Bread uses the best materials, including flour from Japan, Emmi milk from Switzerland, wheat from Canada and cheese from Australia.

The shop looks for all possible ways to meet the needs of its customers. Even people who work late can benefit from the shop’s business hours of 7am to 9pm daily. Staff members from various departments of the group deserve much of the credit for the availability of unusual bun styles, like spicy meat floss buns, extra-long cocktail buns and Smile custard rolls. Smile Bread rolls out seasonal specials at different times of year, including at Christmas and New Year. For example, moistened buns with sauce fillings are made during dry winter weather.

Locating Shops Close to the Community as a Business Philosophy

That bread made with such effort and thoughtfulness can be sold at affordable prices is no easy task, said Mr Orr. “We can only make a small profit, but yet we are very satisfied because our belief is to bring good things to the general public. We see them take the bread happily. This is our greatest motivation.”

Taste of Asia Group has opened several restaurants under different brand names in The Link’s shopping malls. “We and The Link share a common goal, which is to offer a quality environment and service to the community at reasonable cost,” Mr Orr concluded.

Chef Miu said that many people like to flatten pineapple buns before eating them, so that they can fit the pieces into their mouths more easily. Therefore, Smile Bread has modified their pineapple buns by making them into narrowed and flattened pineapple puff pastries.

Smile Bread has specially designed bread plates for kids. They are displayed at a lower level so kids can easily pick their favourites.

麵包店更貼心地為每位顧客送上小卡片,教你回家後翻熱麵包,重拾新鮮出爐的滋味。

A small card is given to each customer, explaining how to reheat bread at home to regain the freshly baked taste.
